There is no better breakfst than a slightly crispy waffle with butter and thick maple syrup in every little square.

I usually make them on weekends and I always make extra to put in the freezer and the kids to have throughout the coming week. Cold cereal everyday before school is not a good thing.

Here is my favorite waffe recipe

3 large eggs
1 1/4 cup milk
1/2 cup melted butter
1 tbs vanilla
2 cups flour
1 tbs baking powder
1/2 cup sugar - I like my waffles sweet
1/2 tsp salt

In an large bowl beat eggs until thick. Add milk, melted butter and vanilla...continue beating mixture for 2 minutes.
Combine the dry ingredients, sift into egg mixture and beat well for 21 more minutes. If necessary add more milk...batter should be about the consistency of pancake batter (maybe a little thicker)

Brush melted butter over the ridges of a hot waffle iron. Ladle the batter onto your hot iron and bake according to manufacturers directions (usually about 2 minutes). When done the ridges on the waffle should be deep golden brown and crispy.

Top with anything you want.

This will make about 6-8 waffles depending on your iron's size. I like a thin waffle maker as opposed to the belgion waffles. I'm old fashioned I guess. The think irons are hard to find, I ended up buying one at an antique store. It works great though.

These waffles are so easy even a DAD can make them.

ENJOY.
